Chef Viliam Beňo presented a new culinary concept that combines French charm with Slovak tradition

Love for traditional and international cuisine inspired chef Viliam Beň and his team to create a new à la carte concept. With their culinary art, they once again linked the elements of French and Slovak cuisine into one whole. They created the dishes in such a way that they alternate flavors, but with an emphasis on the freshness and seasonality of the ingredients, and all this with a vision of determination to cook and sublimate what nature currently offers us.

Fusion of two worlds. Even so, the new one could be briefly described à la carte  a menu that was recently designed by chef Viliam Beňo in cooperation with his team from the hotel restaurant Cle D'Or. The new menu concept emphasizes the elements and authenticity of Slovak traditional cuisine combined with the mastery of French gastronomy. However, don't expect boredom. Get ready for innovative plating and dishes that are prepared at a high technical level. Thanks to this menu, you can discover some of the best dishes from our region, which will be a play of colors and flavors with an accent of French elegance.

With emphasis on quality and freshness of raw materials

In the new menu, you can find dishes made from seasonal and local ingredients from our regional suppliers, such as Hiadlovec cheese from Slovenská Ľupča, fresh eggs from Veľký Bieroviec or herbs and vegetables from Beladíce. All elements of the meals are created exclusively by the hands of our chefs. Whether it's chocolate clay, homemade spinach rolls, dehydrated zucchini, mint gel or homemade pasta, they complete the perfect interplay of appearance and flavors. An integral part of our restaurant is, of course, the "couvert" in the form of a home-made loaf of pre-fermented yeast, which we serve with homemade butter and Ligurček salt from our production. The traditional fish soup, which has been loved by many, has also returned to the menu. The team of chefs enriched it by adding toothpick cheeks or sour cream espuma.

We also think of vegetarians

Food offer in à la carte we have also expanded to include meatless dishes to please the taste buds of guests who are vegetarians. The vision for the design of this menu was to observe the symbiosis of flavors as in the case of other dishes. From the menu you can choose, for example, the cauliflower variation, which consists of grilled cauliflower puree, roasted cauliflower, caramelized hazelnuts combined with tarragon sauce, or you can treat yourself to handmade "Aglio e Olio" pasta combined with Slovak Hiadlovec cheese.

The basis of our philosophy is to offer guests an unforgettable experience from gastronomy, but at the same time we want to give each of you a feeling of exceptionality, so in addition to helping you pair wines with selected dishes, you can also expect a personalized approach from our waiters. They will charm you not only with top service, but also with skills such as tranching fish or slicing Tomahawk steak in front of your eyes.

We believe that culinary art and top service are a team effort, and both worlds have equal weight in creating the final culinary impression for each guest. Our team does not try to depict only the flavors of Slovak-French cuisine through the menu, but offers guests a complex gastronomic experience, thanks to their talent, professionalism and presentation of different taste profiles in individual dishes.
